Apple Cake

When those apple trees are bearing nice, juicy apples in the fall, its time to think about recipes which take advantage of that luscious fruit. A favorite in many homes is apple cake.

The smell of a warm apple cake, fresh from the oven, just can’t be beat. Add a cup of coffee or hot chocolate and you will have the perfect after school or after work treat. This recipe is very simple to make, using plain ingredients found in most kitchens.

Ingredients:

  • 2 large eggs or 3 small eggs
  • 2 cups sifted white flour
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups sugar
  • 1 cup coarsely chopped walnuts (optional)
  • 4 cups finely sliced apples

Grease and flour a 12×9 inch pan or 2 8×8 inch pans. Chop the walnuts and slice the apples.

In a large bowl, beat the eggs slightly. Add all the other ingredients to the eggs and mix together thoroughly, with a large spoon. Do not use an electric mixer. This batter should be stiff.

Spread the batter into a floured and greased 12×9 inch pan or 2 8×8 inch pans.

Bake at 350 degrees for 45 to 60 minutes. Test by poking a toothpick into the center of the cake. If it comes out with moist batter on it, bake a few more minutes. When the toothpick comes out clean, the cake is done.

Serve cake with whipped cream, or it could be frosted with icing:

Icing for Apple Cake

Ingredients:

  • 2 small packages cream cheese
  • 3 tablespoons butter or margarine, melted
  • 1 teaspoon vanilla
  • 1 ½ cups powdered sugar

Melt the butter or margarine over low heat. Add the cream cheese and stir until it is softened, then add the vanilla.

Add enough powdered sugar, stirring well, to make the consistency right for spreading on the cake.

Let the Apple Cake cool slightly before frosting it.
